It's September 6, I'm sitting here wearing an over sized hoodie, enjoying this brisk 61* fall day and contemplating everything that happened this summer. There was definitely tons of memories made, lots of great learning and growing experiences, filled to the brim with laughs, smiles, music, fellowship, birthdays, vacations, sleepovers, cooking, the list could go on and on- but if there is one thing that I can honestly say I am thankful for at the end of summer, it would most definitely be relationships. I can't even begin to describe how much each person I met or spent time with has impacted my life. I'm so blessed with those the Lord has decided to bring into my life and I thank Him daily for you all. ♥ I only pray your summer was as fabulous and attainable as mine.

Having a sister is like having a best friend you can't get rid of. You know whatever you do, they'll still be there.

But, summer is over now and It's time to get back into the swing of school...which by all means isn't all bad because when school starts that also means that fall is here (which by the way may be my favorite season) and with fall comes-- choir, babysitting, more birthdays, weddings, the pumpkin festival, warm apple pie straight from the oven, chilly evenings, reformation day, hot cider, campfires, warm comfy clothes, snuggling up in a warm blankets, etc, etc. By now, you can probably tell why I love it so much. :)

Cinnamon rolls are also a lovely thing on a fall morning.

Sooooo, after your summer- what are you thankful for?? Or better yet, what are YOU looking forward to most in the next four months??? I'd love to hear about your thoughts. :)

Remember in my last post how I said things were kinda crazy busy over here??? Well that was no lie....and considering I haven't posted since the last day of May, I think thats proof enough.

One bad thing about camera's like this........

.....Is its a TAD more inconvenient to carry it around EVERYWHERE you go during the summer- especially shopping...so thats where this.....

....comes in. It's more accessible and even though does not have the best quality it captures the moment fairly well. I'm explaining this becauuuuse all the pictures aren't going to be the best...but you'll sorta get an idea of our summer thus far. :D Enjoy.

Actually- I think spontaneous trips, like that, are the best. :)

Elita, my not-so-little-anymore sister had her 12th birthday on the 15th!!

So in celebration of that she spent the day with these girls and had an absolutely fabulous day.

It was her request to have a carrot cake- so willingly I obliged. It was ALSO her request to add the wolf up top. *shakes head* :)

WHOA!! Tomorrow is gonna be the first day of JUNE- and it's reaaally starting to feel like summer around here...

...I mean, look at this, the next five days are high 80's low 90's!!

And with summer, for us, comes all the joys of AC, water fights, swimming in our creek, watermelon, gardening, FRIENDS, birthdays, anniversaries, vacations, etc, etc!

annnnd, the equipment being put to good use. ;)

NOTHING better on a hot day than to be refreshed by taking a bit of one of these. *nods*

well hello my blogging friends! once again i'm back-- i'm not sure for how long, or how consistent i'll be, especially since the weather is getting nicer (which means more outside work), more graduations to go to, more weddings, possible summer jobs, and of course finishing up this school year but we'll try and see if i can fit in a few blog posts here and there. :)

ok, enough of that; today is MAY 2ND...kinda crazy right? and i'm spending my day.....

this week is gonna be a crazy, crazy week... but it's also gonna be full of new experiences and wonderful people. like for instance, it's gonna consist of getting my four wisdom teeth surgically removed (call me crazy, but i'm excited), and the American Vision conference being held at our church- BUT that shall not stop me from doing a quick post before rushing off to do more prep for the weekend.

Recipe Of The Week-

Chocolate Coconut Ice Cream Recipe

Ingredients:

1 14oz can coconut milk *Coconut milk can often be found in the Asian section of your local grocery store. UPDATE: I made this with an organic coconut milk which WAS NOT labeled “light” but in fact it was. It was not as creamy as when I use Chaokoh brand. So if your ice cream is silky creamy, it may be the coconut milk you are using.

1/3 cup sugar or 1/3 cup agave syrup

2 tablespoons cocoa powder

Directions:

Place all coconut milk, sugar, and cocoa powder in a blender. Blend everything for 30 seconds and pour into your ice cream machine bowl and follow manufacturer’s directions. Transfer to a Rubbermaid type container with lid. Enjoy! :)

I don't know about you, but when someone takes time to come to me, drop an email, text or chat- and just tell me that they are praying, I always feel so very blessed and have a certain peace knowing that whatever I'm facing is being lifted up in prayer. Not only knowing that I have people praying, but also knowing that I have a Father in Heaven listening to EACH prayer, big or small, and that He is always there with listening ears.

So often people come up to me all depressed because either 1. They don't think God cares about their problems or 2. Even if they ask they know that the Lord won't answer them... Those of you who may be thinking like that I encourage you to spend more time studying the bible, because that's where you will find your answers to all your questions.

I pray that y'all will never have doubts that God isn't listening to your prayers. Because not only does the Bible tell us that He is more than listening, but that our prayers will be answered according to God's plan, purpose, and timing. That's when we have true peace. In every aspect of life, the bible tells us to put our trust in the Lord.

hey there! i hope you all have had a fantabulous weekend... i know for a fact that i did. our family attended the annual liberty day celebration, where we heard some wonderful speakers, fellowshipped with old and new friends and overall had a very good time! for those who did attend- it was great hanging out and looking forward to seeing you all again sooooon. :) sad fact: unfortunately we didn't take any and i mean annny pictures, so i have none to share. :(

Prayer Request Of The Week-

due to loosing excessive amounts of hair and feeling very exhausted after a good nights rest... i'm going on a 'no-sugar diet'... which surprisingly has been quite hard for me since going off sugar also means going off of breads, chips, pasta's etc. soooo, i would really appreciate prayers as we try to find the source of the problem. and if anyone has any recipes they would like to share i'm more than open for some. :)

Recipe Of The Week-

even though i won't be able to eat any...i'm making several dozen cookies for the up-coming conference at our church; so this will be one of the recipes i'll be trying. :D

Double Chocolate Coffee Toffee Cookies

2 1/2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup butter, room temperature
1 cup sugar
1/2 cup brown sugar
2 large eggs
1 1/2 tbsp instant coffee, espresso or Via
2 tbsp water
1 tsp vanilla extract
1 1/2 cups milk chocolate chips
2/3 cup toffee, coarsely chopped

Preheat oven to 350F. Line a baking sheet with parchment paper.

In a medium bowl, sift together flour, cocoa powder, baking soda and salt.

In a large bowl, cream together butter and sugars until light. Beat in the eggs one at a time. Whisk together instant coffee, water and vanilla in a small bowl, then add it to the butter mixture. Working with the mixer on low speed, or by hand, gradually incorporate the flour mixture into the butter mixture. Mix only until no streaks of dry ingredients remain. Stir in chocolate chips and toffee.

Shape dough into 1-inch balls and place on prepared baking sheet, allowing at least 1 1/2 inches between cookies for spread.

Bake for 10-13 minutes, until edges are set and centers of the cookies no longer look “wet.”

Cool cookies on baking sheet for 2-3 minutes, then transfer to a wire rack to cool completely.

Makes about 3 1/2 dozen cookies.

goodness this past week has been wonnnderful. the weather has been simply gorgeous....and to prove it i'll show you a few pictures i took while on a walk with my mom a few days back.

annnyway- i recently made my first pot of new orleans gumbo and it turned out surprisingly well and figured i'd share the recipe.

Recipe Of The Week-

New Orleans Gumbo

2 cups chicken broth
1 cup uncooked converted rice
2 celery ribs, chopped
1 medium onion, chopped
2 garlic cloves, minced
1 can (28oz) diced tomatoes, undrained
1 lb. boneless skinless chicken breasts, cut into 1/2 in. cubes
1/2 lb. smoked kielbasa or Polish sausage, cut into 1/2 in. slices
1 tst. dried thyme
1 tsp. pepper
2 bay leaves
1/4 tsp. cayenne pepper
3 Tbsp. all purpose flour
1/4 cup cold water
1 lb. uncooked medium shrimp, peeled and deveined
1 large green pepper, chopped
1/4 cup minced fresh parsley

in a large saucepan, bring broth to a boil. stir in rice, celery, onion and garlic. reduce heat; cover and simmer for 20 minutes.
meanwhile, in a Dutch oven, combine the tomatoes, chicken, kielbasa, thyme, pepper, bay leaves and cayenne. bring to a boil. reduce heat; cover and simmer for 10 minutes.
combine flour and water until smooth; gradually stir into chicken mixture. stir in shrimp and green pepper. cook, uncovered, over medium heat for 4-6 minutes or until shrimp turn pink and gumbo is thickened. discard bay leaves.
remove rice from the heat and let stand for 5 minutes; stir in parsley. serve with gumbo.

i was in one of those moods to bake again- but wanted to try something new. i was shocked to realize that i had actually never made cupcakes before. so i quickly tried to find a recipe but didn't find one i 'fell in love with', soooo i just threw together some ingredients and this is the finished product.....

We've returned from the "Lone Star State"...safe and sound. We had a realllly enjoyable time spending it with family and old/new friends. We were really blessed this year because usually we go down there and only make it too the beach one or two times, but *this* year we made it five different times. And just so this post doesn't drag on about the "first time we went to the beach the second time we went to the beach...etc." I'll just give y'all one of each of us and then the whole family visiting the Alamo. If there is one thing that I have truly learned this past week, it would have to be forgiveness.

Then Peter came to Him and said, “Lord, how often shall my brother sin against me, and I forgive him? Up to seven times?” Jesus said to him, “I do not say to you, up to seven times, but up to seventy times seven. {Matthew 18:21 and 22}

I've recently been struggling with true forgiveness; but thanks to some very good friends of mine- I have been prayed for, encouraged, challenged, and reminded that I need to forgive others just as much as I want to be forgiven for the mistakes I've made. As Christians we are commanded to forgive. Ok, it's easier said then done, right? We can say that we have forgiven someone, but then the next time we see them that hurt and bitterness comes back up. So how do you go about this forgiving process? Well, you have to first make an effort to forgive that person. Then, every time you see that person you have to tell yourself that you have forgiven them for what they did/or are doing, then we must say a prayer for them, and just ask the Lord to bless them. You also have to pray that God would change your heart and your attitude toward that person.

These are some of the many verses that have truly been a comfort and blessing to me- Psalm 86:5, Ephesians 4:32, Colossians 3:13, Matthew 6:14, 2 Corinthians 2:7, 1 John 1:9.

These verses here are a great reminder of just how much Jesus has done for us; by dying on the cross for our sins- giving us that hope; that our sins are indeed forgiven.

*smiles* I hope this wasn't to random of a post. It was just something I had on my mind and thought I would write it out and share. Have a wonderful and blessed week. <3

Has anyone had that feeling before; the feeling where after you've been sick you go crazy with doing the thing you were deprived from??? Well....I'm having that. I have just recently recovered from six, miserable days, of being sick. So now that I'm feeling better- I've had the urge to- bake.

So, I'm sitting here, listening to the warm fire crackle in the fireplace and the peaceful Christmas music softly playing in the background, I'm contemplating this past week and the next few weeks to come. This past week has continued to reminded me how blessed I truly am. Whether it be the little things like, going the theater to watch 'Voyage of the Dawn Treader' with wonderful friends and family, attending Christmas parties, caroling with amazing church family, or even those small things that bring a smile to my face and have a bigger impact then people would think.

In this crazy month of December we can all get caught up with all the stressfulness of, shopping for presents, food preparation, keeping the house immaculate and so on. Not that these things are bad, I mean who doesn't enjoy receiving and giving gifts, making festive food or living in a clean cozy home? But if we get all stressed out and worried that things aren't going as well as we wanted, the season looses its life and joy. Here is a bible verse that is always so encouraging...

'Fear not, for I am with you; Be not dismayed, for I am your God. I will strengthen you, Yes, I will help you, I will uphold you with My righteous right hand.’ Isaiah 41:10

*smiles* Okay, now that I'm mostly done rambling, I pray you all have a wonderful Christmas Season, remembering the real reason for this season. Merry Christmas! <3

On Wednesday, November 3rd our family got up at 6:00am, and headed out to drop Sierra and I off at the St. Louis Airport. It was our very first time flying so, as you can imagine, we were excited and a tad nervous at the same time.

When we arrived at the Sproul's the fun didn't seem to stop, between shopping, pedicures, coffee, movies, cooking, tee ball games, ice skating, hockey games, the beach, P.E. and much more, we had a very enjoyable time. Thank you so much to the Sproul's for opening there home too us! <3 The saying is definitely true, that time flies when you're having fun...but we were so grateful for the time we were able to spend with them.

All the pictures in this post were taken with my ipod, which explains the quality...but it's the memories that count, right? ;) And sometimes the ipod was easier to pull out and snap a picture then the camera. So, if you would like to see some more pictures and also another persons point-of-view you can visit Sierra's blog...her post will be up soon, very soon. ;)

So many of us suffer with worry, or fear wether it be with our occupations, relationships, finances etc. Worry- is really everywhere. Ask yourself this question; how much time everyday do you spend worrying about...well, anything?

It is true though, there are things in this world that you should fear. These are things that should get your attention and concern. There are things that you need to work to avoid and protect your loved ones from. You should live carefully and aware.
But an important distinction needs to be made between looking at life through an honest lens of scripture and living a life of subtle and not-so- subtle life.

"Be anxious for nothing, but in everything by prayer and supplication, with thanksgiving, let your requests be made known to God; and the peace of God, which surpasses all understanding, will guard your hearts and minds through Christ Jesus." {Philippians 4:6,7}

Worry is not caused by what exists outside of us. No, worry is caused by what is going on inside of us. Defeating worry is not about hoping tomorrow will be better, it's about being a good soldier in this deeper war for the heart. It's about living for something bigger that yourself.

In the end, our calling isn't just to affirm that God is sovereign, but to rest in that sovereignty, to trust in it and to cling to it.

"Come, behold the works of the Lord, who has made desolations in the earth. He makes wars cease to the end of the earth; He breaks the bow and cuts the spear in two; He burns the chariot in the fire. Be still, and know that I am God; I will be exalted among the nations I will be exalted in the earth! The Lord of hosts is with us; the God of Jacob is our refuge." {Psalm 46:8-11}

Wow...I can hardly believe that our Reformation Day Faire has already come and passed! Since our church puts it on, we all stay veerrryyy busy doing all the "behind-the-scene" things that must be done. Unfortunately, this year I missed all the sessions, all the highland games, and some of the dancing. But what I have heard the sessions were spectacular, the rain subsided just in time for the highland games which were enjoyed by many, and the dances were as fun as ever.

Because of all the hustle and bustle and also Sierra was using the camera to get some video footage, we weren't able to get many of the event. So instead of pictures of the event- these random pictures of friends and family will have to suffice.

It was a great success this year and ALL GLORY GOES TO GOD! And if you want to stay up-to-date on next years Reformation Faire check it out here.

Ugh, has it seriously been over a month since I last posted?! Craziness..... Well, I thought life would slow down with school starting and all buuuut, I guess I was wrong about that one. :)

September third came and passed so quickly....It was a time of wonderful fellowship, meeting and visiting old and new friends, games, laughter, food, and singing.

Ahh, school is right around the corner. Allot of time right now is being spent preparing and organizing, hence my lack of posting and also being extremely busy with things like- peach picking, freezing food, baseball games, painting our deck, more ultimate Frisbee and tennis...and practically any other summer-ish thing you can think of. :)

Ok, what I'm going to do today is compile some random things together in this one post instead of doing several different ones.

First off, my verse of the day, Trust in the LORD with all your heart, And lean not on your own understanding; In all your ways acknowledge Him, And He shall direct your paths. ~Proverbs 3:5-6

Secondly, Sunday evening we headed off to Morton to play some tennis with some friends...but for me, I was so tired and sore I really wasn't in the mood to play. So instead I took it easy and messed around with the camera. Enjoy!

Thirdly, Here is a recipe that I am hoping to try out when I have some extra time... 'Thought maybe some of you fellow bakers would enjoy making it as well. Good luck!

Cheesecake Brownies
1/2 cup butter
2-oz dark chocolate, chopped
1 cup sugar
2 large eggs
1 tsp vanilla extract
2/3 cup flour
2 tbsp cocoa powder
1/4 tsp salt

8-oz cream cheese, room temperature
1/3 cup sugar
1 large egg
1/2 tsp vanilla extract

Preheat oven to 350F. Line an 8×8-inch square baking pan with aluminum foil and lightly grease.
In a small, heatproof bowl, melt butter and chocolate together. Stir with a fork until very smooth. Set aside to cool for a few minutes.
In a large bowl, whisk together sugar, eggs and vanilla extract. Whisking steadily, pour chocolate mixture into sugar mixture. Stir until smooth. Sift flour, cocoa powder and salt into the bowl and stir until just combined.
Pour into prepared pan and prepare cheesecake mixture.
In a medium bowl, beat cream cheese, sugar, egg and vanilla extract until smooth. Drop in dollops onto prepared brownie batter. Gently swirl two batters with a butter knife.
Bake for 35-40 minutes, until brownies and cheesecake are set. A knife inserted into the cheesecake mixture should come out clean and the edges will be lightly browned.
Cool in the pan completely before slicing and serving, either at room temperature or chilled.
Brownies can be refrigerated, covered, for several days.

Makes 16 large brownies.

I came across this article by James MacDonald and was convicted and encouraged and thought maybe you all would like it as well.

If we were to interview five people who know you best, would they say that you are a glass half-full or a glass half-empty kind of person? Do you tend toward gratefulness or grouchiness? I've taught at Harvest frequently that there are three learned levels of thankfulness. Everybody is enrolled in the school of gratitude—but too many people are flunking out!

First there's basic, for the lack of a better term, elementary school thankfulness. Hebrews 13:15 says, "Through him then let us continually offer up a sacrifice of praise to God, that is, the fruit of lips that acknowledge his name." Thanksgiving is the sacrifice.

I can almost hear you say, "Okay! You want me to be thankful? Fine! I'll make a list. Here are some things. I'll make the sacrifice. I'll be thankful on command!" Congratulations. You're in elementary school gratitude. It's a place to start. But don't stay there!

Once you have developed a consistent habit of thanksgiving, it's time to graduate to the next level—high school thankfulness. First Thessalonians 5:18 says, "In everything, give thanks."

"I guess I can find something to be thankful for in every situation. I might not be thankful for my husband, but I'm thankful for my kids." "I might not be thankful for my job, but I'm thankful for my health insurance." "I might not be thankful for my health, but I'm thankful for my sister...my pastor." In other words, deliberate, but selective gratitude.

Finding something to be thankful for in everything is certainly a step above having random grateful thoughts, but there is still plenty of room for developing a deeply thankful heart. Here's what you're going for, brothers and sisters: Graduate school thankfulness. Ephesians 5:18-20 says, "Giving thanks to God at all times for all things." No matter what's happening; no matter how dark the moment is, God is in control. He can be explicitly trusted. He's working out a purpose beyond what you can imagine. Some of it you'll see in this life; some of it you'll see in the life to come. Give thanks to God. Go for it. Give thanks to God for the hardest part of your life. Just say, "Thank You God for this. You are good!" Watch the blessing begin to flow your way.

Presbytery 2010

The two events (wedding and presbytery) that we have been planning and looking forward to have passed. They have completely flown by. It's a bitter-sweet feeling. We had a absolutely wonderful time, and I am definetly going to miss my friends that don't live near by.

This past weekend was presbytery. We were only able to make it for Friday and Saturday but at least we made it down and I am so glad we did. So much happened in those two days. This is what went on, on friday: We hung out with old and new friends, sang in the choir, had the ordination of the new Elders, had an ice cream social, concert (performed by the wintons) dance and to top the day off, allot of families had a party at the hotel!

Saturday: the morning was free so allot of us kids jammed out in a room singing, dancing and playing instuments. It was amazing and hilarious. :) highlight of the day though, was going to 'milky way park' and playing ultimate frisbee volley ball and having a barbecue. =)
So now that y'all have a better understanding of what went on, I hope you all enjoy the pictures! :) Have an amazing week and stay safe!

After many weeks and months spent planning and preparing...The day finally came when Benjamin Hector and Tiffany Mcdonald became one! :) It was a absolutely wonderful day, but at the same time sad. Not only because we are losing a wonderful, seamstress, musician and cook, but also a very dear friend. My best wishes and congratualtions to the new couple as they make their new life together!

I would love to have been able to do a longer post on this big event but we are staying quite busy around here. Recuperating from the wedding and also getting ready to head up to Presbytery this weekend. So hopefully next week I can do a longer post. =)

Homemade Thin Mints
2 1/4 cups all purpose flour
1/4 cup cornstarch
6 tbsp unsweetened cocoa powder
1/2 tsp salt
1 cup white sugar
1/2 cup butter, room temperature
1/3 cup milk (any kind)
1/2 tsp vanilla extract
3/4 tsp peppermint extract

In a small bowl, whisk together flour, cornstarch, cocoa powder and salt.
In a large bowl, cream together butter and sugar. With the mixer on low speed, add in the milk and the extracts. Mixture will look curdled. Gradually, add in the flour mixture until fully incorporated.
Shape dough into two logs, about 1 1/2 inches (or about 4 cm) in diameter, wrap in plastic wrap and freeze for at least 1-2 hours, until dough is very firm.
Preheat oven to 375F.
Slice dough into rounds not more than 1/4 inch thick - if they are too thick, they will not be as crisp - and place on a parchment lined baking sheet. Cookies will not spread very much, so you can put them quite close together.
Bake for 13-15 minutes, until cookies are firm at the edges. Cool cookies completely on a wire rack before dipping in chocolate.

Dark Chocolate Coating
10-oz dark or semisweet chocolate
1/2 cup butter, room temperature

In a microwave safe bowl, combine chocolate and butter. Melt on high power in the microwave, stirring every 45-60 seconds, until chocolate is smooth. Chocolate should have a consistency somewhere between chocolate syrup and fudge for a thin coating.
Dip each cookie in melted chocolate, turn with a fork to coat, then transfer to a piece of parchment paper or wax paper to set up for at least 30 minutes, or until chocolate is cool and firm.
Reheat chocolate as needed to keep it smooth and easy to dip into.

Makes 3 1/2-4 dozen cookies.

So much has happened on this trip, it has been so much fun. It's been great to just be able to relax, and too spend time with family and friends, enjoy the weather and of course, we can't forget all the games and conversations we had! I would do a post of the whole thing, but when you have other siblings and they have their blogs it would be quite repetitive...so I am going to this post on our absolutely fantastic trip to the beach!

We were planing on leaving early and spending most of the day there, but us kids had gone to bed quite late, which ends up happening allot down there- We have the excuse of only seeing them once a year so, we have to do as much as possible in the short time we have with them! =) Anyway, we ended up waking up late and didn't leave until around 10:00. It was our first time going to North Padre Island Beach, and when we arrived we were so amazed at how beautiful it was and it reminded us all of God's incredible handiwork! This past Monday the Rykens were so kind as to invite our family to go up to Chicago with them, unfortunately our whole family wasn't able to make it, so us three older kids went up instead. So Monday morning the Rykens came and picked us up at 6:00 which meant we had to get up early so Sierra decided that 4:30 would be a good time. :) So as you can guess it was a long but wonderful day filled with visiting the Museum of Science and Industry, Starbucks, and crazy car rides there and back! So enjoy the pictures!

I have so many things to be thankful for, but to mention them all would take a while!

Reformation Day Faire 2009!

This past weekend was our third annual Reformation Day Faire! After many hours of long preparation...the day finally arrived, We had been praying for good weather and were happy that by the time the outdoor activities started it was beautiful outside! We enjoyed some speeches from Douglas Bond, Marcus Serven, and James McDonald, and also music from Charlie Zahm!

It was so nice to vist with old friends, and also to make new friendships!

I can't believe its October! This year has flown by, it seems like just a few weeks ago we were celebrating new years in Texas with my moms family...

Now, everything is changing from summer to fall...

I LOVE fall, the weather is perfect, and their are so many fun things that can be done...such as going to apple orchards, having wiener roasts, final things being harvested from the garden and just spending time with family and friends...their are so many Things that we can enjoy, And I would have to say this is my favorite season! :)
